Super Healthy Turmeric Couscous

For some reason, no matter how many times I look at the word to try and memorize the spelling (which works for me most of the time), I cannot for the life of me stop spelling Turmeric as Tumeric! Be that as it may, I love this healthy spice, which I was introduced to by a herbalist who was trying to help me with my pain levels, following Lyme Disease. The lovely yellow spice can be substituted color-wise for saffron in most dishes and it imparts a lovely golden color to the dish and a very mild flavor. It comes from a tuber like ginger and the powder you get in the store is a crushed and dried version of the root. It is used a lot in Middle Eastern and Asian Cuisines as a food spice but also as a medicinal spice. I know eating Turmeric helps me keep inflammation down in my body but it also helps keep me happy because yellow is such a bright and friendly color! I love eating yellow things!

I guess my kids are just like me because they also love yellow foods. Unfortunately when they were young that meant boxed macaroni and cheese, pasteurized cheese product and rice a roni! I will admit it, I wasn’t always the best cook, but I have been making up for it as best I can for the past 10 years, and that’s why I hide as many healthy things as I can into common every day meals so the stress levels are low and the enjoyment levels are high for the kids and I know I am feeding them well!

What I love about this recipe for couscous is that the kids love it and will eat it and have no clue that I am again hiding bone broth and vegetables in it. This makes a great side dish with dinner, but the couscous also works wonderfully well in a tabuoli like salad when you do not have any bulgar wheat. My kids will even eat it cold right out of the fridge because the preparation techniques keep it moist and tender. You also can’t beat the fact that this grain-like pasta (made from the same semolina as other pastas, or you can get a great whole wheat version), cooks up in five minutes and takes the heat out the kitchen in the summer months! I usually cook up a big batch and store it in the fridge to add to cold salads or heat it back up for another dinner side dish, tossing in some cooked veggies the second time around.

Super Healthy Turmeric Couscous

Serves 4-6

3 Tbs unsalted butter

2 Cups whole wheat couscous (or plain)

1/2 Cup aromatic veggie puree (if you are omitting this you can dice up an onion and a little garlic and saute it in the butter before adding in the stock to bring to a boil. Increase the stock to 2 cups)

1-1/2 Cups beef bone stock, chicken stock or vegetable stock if you want a vegetarian version

1 Tbs Turmeric

Sea salt and freshly ground black pepper to taste

Chopped fresh parsley to garnish if you have any laying around (I didn’t this time!)

Heat butter in heavy sauce pan with cover over medium high. Add in the aromatic veggie puree and stire well, cooking until it becmes aromatic and begins to release its liquid. Add in the turmeric and cook for 1 more minute.

Add in the broth, salt and pepper to taste, and turn the heat to high, bringing the liquid to a boil. Stir in the couscous and mix well. Cover with the lid and remove from heat. Allow to sit undisturbed for 5 or so minutes. Fluff with a fork, taste and adjust seasoning. Toss with parsley garnish if using and serve.

Try this quick and easy way to get healthy vegetables, bone stock nutrients and the wonderful benefits of turmeric into your loved ones, and have them actually thank you for it!
