I know I have to admit I have a problem. You see, I am absolutely in love with peaches. I know I have posted many healthy recipes for nutrient dense food recently that feature peaches, but I simply cannot help myself! Peaches are to me, the essence of summer, and as long as they are available locally, I will be making peach recipes. You can come along with me on this journey if you want to admit to your peach frenzy!
This past weekend I shared two peach recipes with my big family and they enjoyed both of them. You can see my story about the joys of sharing a meal with extended family if you want to check out these great recipes. Even though I made big batches for the party, I still had plenty of peaches left over and I wanted to use them up before they started to turn.
I had yet to preserve any peaches, so I started thinking about canning them, but frankly, I was too lazy and wanted to relax after a busy weekend, so I decided to make a super simple Basic Peach Sauce that I could use in different ways this week.
Basic Peach Sauce
4 Large ripe peaches with skin on, cut into chunks
1/4 Cup raw honey
1 Cup filtered water
1 Tsp. ginger or 1/4 inch fresh ginger peeled and chopped
1 Tsp. cinnamon
1/2 Tsp. nutmeg
1 Tsp. vanilla
(All spices can be adjusted to your taste, or use the spices you enjoy with peaches!)
In a large sauce pan with a cover, mix peaches, sugar, spices and water and bring to a boil over medium high heat, stirring occasionally to prevent sticking. Turn the heat down to low and allow to simmer until peaches are very soft and most of the water is absorbed.
Pour the entire mixture into a Vitamix or blender, if using a stick blender, you will need to blanch and peel the peaches before cooking them. Blend the mixture on high speed until very smooth. Pour liquid back into the pan and reduce the liquid even more by stirring constantly over medium heat. The sauce is ready when the bubbles pop to the surface and leave marks. Be careful not to allow the sauce to get too hot as it can spatter. Turn heat down to very low and taste the sauce. Adjust the seasoning and honey to your taste.
The sauce is complete as it is and can be used as a topping for ice cream or yogurt as is.
Peaches and Cream Soup Variation
Remove Basic Peach Sauce from the heat and allow to cool. While still a bit above room temperature stir in 1 cup of cream and mix well. Taste for seasoning and adjust sweetener and spices to your taste. Serve at room temperature and pass finely diced peaches to top with. Also combines well with yogurt cheese and candied walnuts.
My family adored the peach sauce over greek style yogurt and the dessert soup was extra yummy, but I got to have that all by myself! Good! More for me! I stored the remaining peach sauce in a canning jar which I am storing in the refrigerator for future use. I am sure the recipe can be canned using the same process as you would to can peaches. Maple syrup would also work as the sweetener instead of honey. I really enjoyed this and will make it again!

Please, please come set up camp in my home, and you can have all the peaches your heart desires. I think I’ve still got at least 4 bushels to go through. These recipes look wonderful, though, perfect for the Hearth and Soul hop.

Yum – I love peaches and am looking forward to them being in season here in just a few months time. Last year, instead of canning, I roasted lots of peaches and then froze them to turn into sauces, ice cream, etc. Was a great, very easy way of preserving them.

Except for the cinnamon, which I hate (I know I am crazy), everything else I agree with!
