Sweet and spicy sloppy joe and quick greens!

I am so happy to have access to a great Dairy Club, that also gives me the opportunity to purchase amazing pastured and organically raised grass fed meats. When we went to visit the Stoltzfus’ Amish farm, we got to see the animals living in the meadow and we know how well they are all treated throughout their lives. We are happy to be able to support this sustainable and healthy way of raising pasture animals.

During our visit, we were served an amazing sausage sandwich in barbeque sauce, so this weekend, I pulled out the recipe that we got a the farm and thought I would make it. I had purchased the fresh sausage and took a look at the recipe which was rather complex and took a long time to make. I couldn’t wait! I had a craving for something sweet and spicy, and I had always wanted to make a healthy alternative to the Manwich’s that my husband so clearly loved as a child!

While I craved a good Sloppy Joe, I sometimes find the sweetness overpowering, so I pondered on this and thought why not combine the sweet spiciness of the meat with some heavy greens? The combo was to die for and I actually served them heaped on a plate wihtout buns. Even my kids could not taste the bitterness of the greens! You can of course serve this on toasted buns, and you can also make it with ground beef, but the sausage added a complexity to it that was awesome!

Healthy Sloppy Joe and Quick Greens

1 Lb loose fresh pastured sausage, ground pork or ground beef (unspiced sausage is best)

4 Tbs bacon grease

1 Tsp thyme

1 Tbs garlic powder

Freshly ground pepper

Sea Salt to taste

1 Cup chicken broth divided as indicated in recipe

Sauce

1/4 Cup honey or maple syrup

1/3 Cup fermented ketchup or organic ketchup

1 Tbs organic coconut oil

1 Tsp garlic

1 Tsp celery seed

1 tsp onion powder

1 Tbs. Worchestershire Sauce

1 Tbs. hot sauce of your choice ( I used El Yucatano Chipotle-this is optional)

1 Tsp. chili powder

Greens

4 Cups washed and dried mixed greens (kale, chard, collards, mustard). Cut into small pieces and remove hard stems.

1 Tsp. garlic powder

Salt and Pepper to taste

In a large cast iron skillet turned on medium heat, melt 1 Tbs. bacon grease until hot. Cook sausage on medium high heat, breaking up into small crumbles and adding in the thyme and garlic powder when the pork is almost done and showing no pink. Remove to a bowl and cover to keep warm.

Add the remaining bacon grease and turn the heat to medium high. When the oil is hot, throw in the greens and press them down well into the grease, tossing them until they are all wilted. Add in 1/2 cup of chicken broth, garlic and very little salt and some ground pepper (the sausage can be salty, so I used very little additional salt). Bring the greens to a high simmer and stir occassionally until tender and almost all the liquid has evaporated. Remove to a bowl and cover to keep warm.

Deglaze the pan with 1/4 to 1/2 cup of chicken stock then add back in the pork and bring to a simmer on medium or medium to high heat.  In a small bowl, mix together the ingredients for the sauce then pour over the simmering meat. Stir well to coat with the sauce and allow the meat to simmer until the sauce is bubbly or about 5 minutes. If the sauce dries out too fast, add in another 1/4 cup of chicken broth to keep the meat from sticking. Taste and adjust the seasoning.

Serve immediately, layering the greens with the Sloppy Joe onto whole grain buns or serving the meat piled high on the greens. My kids and my husband adored this and I will be making it again very soon!

    I would never have thought to serve sloppy joes on greens but now I can’t wait to try it! Oh and I so very much love that you used BACON grease! Greens just aren’t the same without it! Yummy!

    Alex, this looks great. Sloppy Joes are not something I’ve ever eaten – not traditional fare in New Zealand. You’ve really inspired me to try. I often get beautiful handmade organic sausages at my local farmers’ market and am always looking for new ideas for preparing them, so this definitely goes on the list. Thanks.

    Well, if you like spicy and sweet together which is then cut by the deep flavor of the greens, then this is for you! In fact, if you DONT like greens this is for you because the typical bitterness is completely cancelled out by the meat! Glad you all liked it, and it is going in my permanent recipe box!
